I agree with misstopia, Catelyn's very careful NOT to lecture Robb or Edmure in public and to make sure both of them keep power in front of the men.
The snap at Edmure (after he spends a long time wishing his bride is pretty) is only that "Cersei Lannister is comely." reminding him (fairly so I think) that beauty is not the only thing that makes a good spouse.
Something I think she went through something similar in the switch from Brandon (who was very handsome) to Ned, who was less than handsome.
I'm sorry you find Catelyn tedious. When you read more of these sorting apps, and starting sorting, I think you'll see the reasons for disliking her are pretty tedious too.
